Spanish Christmas Marzipan

Ingredients

250g unroasted almonds

2 cup caster sugar

2 egg whites beaten lightly

1 cup water

1/2 tbs vanilla extract 4 tbs icing sugar


Method

Blanch the almonds for 3-4 minutes in boiling water. Strain with a slotted spoon and leave to dry on some kitchen paper. Place the almonds in a blender or food processor and grind until a smooth, thick paste with no lumps.

Set the paste aside and make the syrup, by combining the water and sugar in a Le Creuset 18cm Saucepan. Bring to the boil without stirring.

Using a sugar thermometer let the temperature of the mixture rise to 110C and quickly remove from the heat.

Carefully stir in the vanilla extract before slowly adding the ground almond paste and egg whites.

Return the mixture to the stovetop and cook on a low heat until a dough-like consistency that peels away from the pan (3-4 minutes).

Place the dough onto a work surface pre-dusted with half of the icing sugar. Leave to cool until it can be handled.

Similar to kneading bread, work the dough with your hands until the mixture is smooth, while slowly adding the remainder of the icing sugar.

To serve, tear off bite sized pieces and place onto patty cases or wrap in decorated tissue paper.
