Ingredients (Serves 4-6 people )

2 Chicken Breasts - Diced

200g Chick Peas - soaked in water overnight.

1 Kilo tomatoes - Chopped

1 Brown Onion - Chopped

2 Medium Carrots - Sliced

4 Medium Zucchini - Sliced

2 Sticks of Celery - Sliced

200g Pitted Black Olives

400g Italian Tomato Sauce

1 Tblspn Olive Oil

2 Cups Chicken Stock

2 Cups Water

4 Cloves of Garlic - Sliced

2 Cardamon Pods - Crushed

2 Cups Boiled Rice - Cooked

Method

Heat Le Creuset Casserole Dish.

Add tablespoon Olive Oil.

Add Chopped Garlic, Onion and Cardamon, sear for 2 minutes.

Add Chopped Chicken, cook for 4 minutes.

Add Chicken stock, tomato sauce, cook for 2 minutes.

Add sliced zucchini, carrots, celery.

Stir, bring to boil.

Add drained chick peas and chopped tomatoes.

Add 1-2 cups water.

Stir, Cover, Reduce heat.

Simmer for 40 minutes.

Serve with Boiled Rice
