Ice Cream Christmas Cake


1.5 litre good-quality vanilla ice cream

500g good-quality plum pudding

cup glace cherries, roughly chopped

cup sultanas

cup dried cranberries

1 tbs of orange zest

cup chopped pistachios

cup slithered roasted macadamia nuts

2 tbsp Baileys Irish cream liqueur

2 tbsp Cointreau

2/3 cup chocolate pieces

45mls water

Whipped cream?and berries to serve


Place the softened icecream into a large bowl. Chop the pudding into bite sized

pieces and add. Add the dried fruits and nuts, then  the liqueurs. Mix gently until combined, but don't over mix, or break up the pudding too much! Spoon the mixture into 1 large stainless steel

pudding bowl approx. 2l in size or if you prefer into individual moulds.

Cover and freeze overnight or until firm. To serve dip the pudding

bowl/s into warm water to loosen the edge. Tip pudding onto a plate

and garnish with fresh berries.
