Christmas Pudding


Step 1

250 grams of sultanas

250 grams of raisins

185 grams of mixed peel, cherries or glace fruit

185 grams currants

1 grated lemon rind only

2 tablespoons of lemon juice

2 tablespoons brandy

Combine all of these ingredients and let sit for 1 week. Stirring occasionally.

Step 2:

250 grams of butter

2 cups of brown sugar

5 eggs

1 cups plan flour

1 tsp mixed spice

250 grams fresh bread crumbs.

Cream the butter and sugar. Beat in the eggs one at a time. Fold in the remaining ingredients. Pour into pudding tin. Fill a large pot with water, place sealed pudding into water. Bring to the boil and then simmer gently for 6 hours.
