Christmas Crepes



4 eggs

1 1/3 cups (300ml) milk

2 tbsp butter, melted

1 cup (120g) all purpose flour

2 tbsp white sugar

teaspoon salt

300ml thickened cream

8 strawberries thinly sliced


1. Whisk together the eggs, milk, melted butter, flour, sugar and salt until smooth.

2. Heat a 28cm Stockholm GreenPan crepe pan over medium heat. Grease the pan with a small amount of butter or oil.

3. Spoon about 1 ladle of crepe batter into the hot pan, tilting the pan so that the cooking surface is evenly coated.

4. Cook over medium heat for 1 to 2 minutes on a side or until golden brown.

5. Spoon some of the fresh cream into the centre of the crepe, add a hand full of strawberries and fold each side over to create a case.

6. Serve immediately and garnish with strawberries and a dusting of icing sugar.

Serves 4

Note; Change the fresh fruits and garnish according to the season. At the moment why not try mangos, berries, and peaches, which are in season over the summer months.
